Megan Forrester’s Favorite Thanksgiving Recipe
The back office at the Hauser home has been converted into a mini-video recording studio for each member of the Hauser family along with two special guests to share one of their favorite Thanksgiving recipes other than the pecan pie.
Hauser Family File: Megan Forrester is the wife of Brian and the sister of Lauren Hauser. Megan is a multi-tasking manager both in and out of the office. She is a foodie at heart and loves watching, reading, and experimenting with all things cooking and baking related.
“Roll the tape.”
Megan marches into the room with her food binder in one hand and her “I’m the Boss” pen in the other. “Alright, let’s see, there are so many options to choose from.” Megan flops down on the couch and flips through the binder.
“Okay, wow, which recipe to share.” She glances up at the camera. “I mean, technically I think I should be able to share more than one recipe, since I’ve got so many.” She bites her lip and raises and eyebrow. “Okay, fine.” Megan rolls her eyes. “Alright, kale is still the most sought after green power vegetable so I will share my Creamed Kale recipe, it’s definitely better than the green beans.” She tosses her blond head back and laughs.
Megan’s Creamed Kale with Caramelized Shallots (Recipe Courtesy of Bobby Flay)
- 3 tablespoons of unsalted butter
- 3 tablespoons finely chopped Spanish onion
- 3 tablespoons all-purpose flour
- 3 cups milk, scaled
- Pinch freshly grated nutmeg
- Salt and freshly ground pepper
- 3 pounds kale, center stalk removed, and coarsely torn into pieces
- Carmelized Shallots, recipe follows
Heat the butter in a medium saucepan over medium heat. Add the onions and cook until soft. Whisk in the flour and cook for 2 to 3 minutes, not allowing the mixture to obtain any color. Whisk in the warm milk and cook until thickened. Season with nutmeg and salt and pepper, to taste. Keep warm until ready to use. Meanwhile, bring a medium pot of salted water to a boil. Add the kale and cook until tender, about 10 to 15 minutes. Drain in a colander and then return to pot. Add cream sauce and cook until flavors meld, about 2 minutes. Season with salt and pepper, to taste. Plate creamed kale and then top with Caramelized Shallots.
Caramelized Shallots Recipe
- 6 tablespoons unsalted butter
- 2 tablespoons sugar
- 10 shallots, peeled and sliced
- Salt and freshly ground pepper
Melt the butter and sugar in a medium saucepan over medium heat. Add the shallots, season with salt and pepper, and cook until they begin to brown all over, about 10 minutes. Place all ingredients into pop and simmer on low heat until majority of cranberries have burst, stir continuously. Marinate in refrigerator for thirty minutes.
